Baked Tofu, Maple-Dijon Potato and Green Beans

I made the famous Maple-Dijon Potato and Green Bean dish from Vegan with a Vengeance. This is one of my absolute favourites. Super simple to make and tastes like it has been baking all day. I breaded some tofu slices and sliced up some more cucumbers to serve on the side.
