Sushi and Rice Wraps

Since it has been so hot lately and we have been working on the house all day with my parents we wanted a cool dinner. We made sushi with marinated asparagus and avocado and rice wraps with noodles, cilantro, lettuce, carrots and marinated tofu.

Vegan Buffalo Wings, Corn and Salad


I made Buffalo Vegan Wings tonight from Vegan Dad's blog. We served it with steamed local corn and a mixed salad with some of the blue sheese dressing I made for dressing and dipping. I love these wings. They are simple to make and taste amazing.

Veggie Burger Tacos?

Due to a slight mishap with the bread I had veggie burger tacos for supper instead of burgers on buns. They turned out to actually taste quite nice. Paired them with a nice crisp salad with some of the Blue Sheese dressing I made. All I did for the dressing was mix 1/3 of a block of Blue Sheese with 2 tbsp vegan sour cream and added some cream (because I had to use it up). It actually tasted nice and creamy.
This was the ice cream I made the other day. Peanut Butter from Vice Cream. I have to say I am not very fond of it. It just did not taste good to me and once the chocolate froze it did not taste all that great either. Cookies and cream next time...

Tacos



I cheated a little tonight and picked up some ground round Mexican flavoured soy from Yves. We made tacos with lettuce, salsa, tomatoes and sheese. They were very filling. A nice quick meal.

In my glory....with Sheese!

It is finally back in town...Sheese! I have waited so long to have more. This time I found a Blue Style which I am experimenting with. I also picked up Gouda and Strong Cheddar. If you can find this locally and have not tried it yet...do it! This product is so amazing. Granted it does not melt like some of the other vegan cheezes but the taste is amazing and it makes a wonderful hard type cheeze to add on crackers, sandwiches etc. I also find that it will melt if you put it into something...like a panzaroti.

Potluck Salad


We had to go to a co-worker's potluck tonight and I thought I would try a variation of the Mango and Quinoa salad from Veganomicon. Instead this is a Peach, Couscous and Black bean salad. I think it turned out lovely. People were shocked I put peaches in it but the sweetness blended in nicely. It was a meal in itself, packed with protein, veggies and carbs!

Tofu and Potato Stew in Miso Gravy

Wow it seems like it has been forever since I last blogged. It has been way too hot to cook around here. I miss freshly baked cookies and cupcakes but cannot bear to turn the oven on most days. I made a recipe from the Vegan with a Vengeance cookbook. This is such comfort food. A nice rich miso gravy with big chunks of tofu, potatoes, mushrooms and I added carrots and fresh shelled peas. It was nice because I could finish it off in the slow cooker and did not have to heat up the whole house.
