Since it has been so hot lately and we have been working on the house all day with my parents we wanted a cool dinner. We made sushi with marinated asparagus and avocado and rice wraps with noodles, cilantro, lettuce, carrots and marinated tofu.
I have been a vegan for over 6 years now. I live with my vegetarian husband and 2 kitties. I love cooking and baking and hope to inspire new vegans on what to make.
