I used up the last package of premade sloppy joe mix I had in the cupboard. I think it is the Fantastic brand of sloppy joes. They are good but I would like to duplicate a recipe with the same flavour but with beans instead. Served this on a bun with a side of slightly steamed local broccoli.
A smoothie we had today. Banana, cantaloupe and blueberries with soymilk. Interesting combo but was very good!

Sandwiches and Soup
The S's continue with sandwiches and soup. I went to a local market this morning and almost all of the fresh veggies are local. The bread was even made with local grain and ingredients. I put on some hummus with Frank's Red Hot Sauce for a kick, walla-walla onions, avocado, tomato, pickles and baby cucumbers. The sandwich was amazing, bursting with flavours of summer veggies and fruit. We had some of Amy's veggie soup on the side.

Samosas and Salad
Wow I guess it has been an S kind of week this week. I found some samosas in the freezer and decided to cook those in our new toaster oven. As you can see by the burnt parts I need to work the kinks out of the toaster oven. I served it with a lovely salad and homemade dressing with a pear/chai tea jam, rice vinegar and olive oil combo. It was sweet and tangy and also doubled as a dipping sauce for the samosas

Sushi, Salad and Smoothie
Another warm day out today so I wanted to make something cool for dinner. I made some sushi with avocado, red pepper and cucumber. I also made a salad with edemame beans, corn, diced red pepper and leftover salad dressing from last night. The edemame and corn where a great combo together.
To boost my fruit intake today I made myself a nice smoothie for a snack with 1 cup soymilk, 1 banana and 1/2 cup frozen blueberries. It tasted like blueberry heaven should taste like.

Monday night dinner #2
Tonight my husband made some veggie burgers for dinner and I whipped up a salad and dressing when I got home from yoga. These veggie burgers from Sobey's are the most amazing things I have tasted. I love them. The salad had mixed lettuce and herbs, tomato, cucumber, onion and pepitas with a dressing of grainy mustard, maple syrup, balsamic vinegar and olive oil. It was delish.

Veggie Burgers with Tomato and Avocado
Kind of a cheater night tonight we had premade veggie burgers. These new burgers are some of the best veggie ones I think I have ever had. They held up great in the toaster oven and did not dry out. They would probably be amazing on the bbq. Served it with the works including avocado and tomato. Delish!

Mac and Cheeze and Edamame
I made the recipe for Mac and Cheeze from June's issue of Vegetarian Times. The recipe comes from Vita Café in Portland, Oregon. I was lucky enough to visit this restaurant many times when I was in Portland for 5 weeks this time last year. I really miss Portland with its friendly people and amazing veg restaurants. Sigh...maybe some day I can go back again. The recipe was super easy to make and I added some edamame beans for veggies and a breadstick. Overall I easy, quick and good meal. I froze half of the cheeze sauce so I will see how it stands up to freezing, defrosting and reheating.

I now have Monday nights off!
So Monday night is now yoga night for me. Due to my brother's inspiration I thought I would give yoga a try. When I found someone who teaches it within a 10 minute walk from our house I thought it could not be more perfect. I love it so far. The instructor is amazing and I feel so stretched out afterwards. Plus I sleep like a baby on monday nights. So, monday nights is also the night that DH is going to cook (well make something for supper at least). I told him that as long as it was a balance of carbs, protein and fruit/veggies I would be happy.
Tonight's dinner consisted of a peanut butter, jam and banana sandwich on rye bread with carrots and 1 olive. It was pretty cute when I came home and the presentation of the plates spelled out my name (Céline). I was still a little full after the meal but A for effort and plate presentation for sure. Cannot wait to see what will be for dinner next monday :)

Strawberry Ice Cream
I made strawberry ice cream in the ice cream maker tonight using this recipe from A Vegan Ice Cream Paradise . I swear it tasted just like I remember strawberry milkshakes tasting. It must be the soycream. This recipe is a keeper although I have to tweak it a little. I cut the sugar in half since it was so sweet but need to up something else because it did not thicken up. It sure was good though.

Hot Wingz, baby potatoes and Asparagus
Still trying to clean out the cupboards where I found a box of seitan mix so I decided to make these Vegan Boneless Chickenless Hot Wingz from Vegan Dad . I did not shape them the same as him but more like nuggets I guess. I tossed them with some Frank's Red Hot Sauce and Earth balance combo. They were nice. I liked the flavour although I wish I would have had some extra sauce for them. The baby potatoes were roasted with rosemary and fresh dill and grilled asparagus. All made in the toaster oven. Was a very filling and satisfying meal.

Pizza Night
It was pizza night again tonight and I used the dough from VWAV subbing 1/2 with whole wheat flour. I love this dough recipe, it turns out perfect each time and makes 2 huge pizzas. I made 2 different kinds of pizza but both had pizza sauce, cashew tofu ricotta from Veganomicon, green and black olives, artichoke hearts, green onion, red onion and then one pizza had thinly sliced potato and the other had veg pepperoni. Everyone seemed to enjoy them and gobbled them up quickly. I might have overcooked the crust a tad but they still tasted amazing. I love homemade pizza!
