The March 2009 challenge is hosted by Mary of Beans and Caviar, Melinda of Melbourne Larder and Enza of Io Da Grande. They have chosen Lasagne of Emilia-Romagna from The Splendid Table by Lynne Rossetto Kasper as the challenge.
This was a fun challenge to make our own noodles. I made some spinach and some regular noodles to add to my lasagna. I also made a nice hearty vegan ragu to layer in between the "stuffing". All in all this was an easy challenge since I love making lasagnas but it is always nice to alter existing recipes and try something new.
