
Tonight's dinner cleaned out some dried chickpeas I have had in the
cupboard for probably too long. I soaked them last night and cooked them in the pressure cooker today. I made a sauce from 1 chopped onion sauteed in a little earth balance, added some paprika and various seasonings, 1/4 cup of flour, browned all of that then added 1 1/2 cups of veggie stock and 1/2 cup of unsweetened almond milk. Let it all thicken, added the chickpeas and a jar of pimentos which has been sitting in the fridge for way too long as well. I served it over mashed potatoes from a friend's garden and some lovely
brussel sprouts. It was an easy yet enjoyable meal.
