In my attempt to clean the freezer (still!) I found some ofthis in the back. Kind of a frittata with spinach and mushrooms. I did not like it as it was so I decided to sautee some onions, portabellos and leftover potatoes in a pan and then add the tofu mixture. It was really nice this way. I think I liked the consistency of it better when it was frozen and then thawed.
I have been a vegan for over 6 years now. I live with my vegetarian husband and 2 kitties. I love cooking and baking and hope to inspire new vegans on what to make.
